Ingredients:


        1/2 cup sugar-free Hershey‘s chocolate chips

        1/4 cup   cocoa butter     

        3 tablespoons MCT oil

        1 teaspoon or to taste peppermint extractt 


Directions:

  1. Melt chocolate and cocoa butter in microwave. Stir ever 30 seconds until chips and cocoa butter are melted.
  2. Add MCT oil and peppermint to chocolate. Mix well.
  3. Pour into silicone form. I used the small forms.

  4. Freeze for 20 minutes. 
  5. Pop the chocolate mints out of the form. Store in air tight container.
  6. Enjoy!

Ingredients 
1/2 cup coconut cream in a can
1/4 cup water
2 egg yolks
1 Tablespoon MCT oil
1 teaspoon vanilla 1 teaspoon unsweetened cocoa 

1 1/2 packets of sweetener 
4 ice cubes

Directions 

1 Add all ingredients in blender until smooth and creamy.

INGREDIENTS

  • ½ cup Almond flour
  • ½ cup Tapioca flour or arrowroot flour
  • 1 cup Coconut milk, canned and full fat
  • Salt, adjust to taste, optional
  • Butter (slather that bread!), optional


INSTRUCTIONS

1 Preheat a crepe pan OR nonstick pan over medium heat.

2 Mix all the ingredients together in a bowl, and pour ¼ cup of the batter onto the pan.

3 After the batter fluffs up and looks firm/mostly cooked, flip it over to cook the other side (be patient, this takes a little time!).

4 Serve immediately

Ingredients

  • 1 tablespoon butter 
  • 2 tablespoons coconut oil
  • 1 large onion diced
  • 1 tablespoon garam masala
  • 2 teaspoons salt more to taste if needed
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon chili powdered 
  • 1/2 teaspoon ground pepper
  • 6-7 cloves garlic diced
  • 2" knob of ginger peeled and diced
  • 2  10oz cans diced tomatoes. I used ROTEL
  • 2-1/2 pounds boneless, skinless chicken into 2" cubes
  • 3 coconut cream 
  • 2 tablespoons cashew butter
  • 1/2 cup bone broth or water

Instructions

  1. Press the Saute button on the Instant Pot and add the butter or ghee and coconut oil to melt.
  2. Add the diced onion, ginger, minced garlic and saute 3 to 5 minutes.
  3. Add the spices and stir, cooking about 1 minute, until fragrant. 
  4. Then add Rotel tomatoes, and 1/2 cup broth.
  5. Place the cubed chicken into the Instant Pot, submerging it under the tomato-spice mixture.
  6. Lock the lid, make sure the vent is sealed, and press the Manual button. Adjust the time to 10 minutes.
  7. When the Instant Pot beeps, release the pressure immediately.
  8. Using a slotted spoon, remove the chicken pieces from the sauce, place into a bowl, and set aside.
  9. Stir in the almond or cashew butter and yogurt or coconut cream
  10. Using an immersion blender, blend the tomato sauce until smooth and thick.
  11. Return the chicken to the blended sauce and serve with keto friendly naan bread

  • 1 6 oz can tomato paste
  • 1 15 oz can tomato sauce
  • 1-2 TBS oregano to taste

  • ¼ tsp freshly ground black pepper

Easy Keto Low Carb Pumpkin Pie Recipe (Sugar-Free, Gluten-Free)

You only need a few ingredients for this easy keto low carb pumpkin pie recipe with almond flour crust. It will be your favorite sugar-free pumpkin pie!

Ingredients

  • 1 recipe Almond flour pie crust (or your favorite pie crust recipe)
  • 1 15-oz can Pumpkin puree
  • 1/2 cup Heavy cream (or coconut cream for dairy-free/paleo)
  • 2 large Egg (at room temperature)
  • 2/3 cup Powdered erythritol
  • 2 tsp Pumpkin pie spice
  • 1/4 tsp Sea salt
  • 1 tsp Vanilla extract (optional)
  • 1 tsp Blackstrap molasses (optional)

Instructions

  1. Make the sweet almond flour pie crust according to the directions here.
  2. Meanwhile, beat together all remaining ingredients at medium-low speed, until smooth. (Don't overmix.)
  3. When the pie crust is done baking, reduce the oven temperature to 325 degrees F (163 degrees C). Cool the crust on the counter for at least 10 minutes, longer if you have time.
  4. Pour the filling into the crust. Gently tap on the counter to release air bubbles.
  5. Bake for 40-50 minutes, until the pie is almost set but still slightly jiggly in the center. (Check on it occasionally, and if you see the crust start to brown, cover the crust edge with foil and return to the oven until the filling is done. It should still jiggle a bit in the center, like a custard before it sets.)
  6. Cool completely on the counter, then refrigerate at least an hour before slicing. Pie can be refrigerated overnight.

Recipe Notes

To reduce the chance of cracking your low carb pumpkin pie, you can bake the pie in a water bath. Otherwise, if you end up with cracks, you can always cover them with whipped cream.

Ingredients 


3/4 c mayonnaise store bought or Homemade

3 Tbsp Erythritol

1 tsp finely grated onion

1 1/2 Tbsp apple cider vinegar

1/2 tsp mustard 

1/4 tsp sea salt

2 tsp poppyseeds 


Instructions


In a mixing bowl, whisk together mayonnaise, sweetener, apple cider, vinegar, grated onion, mustard and salt and until sweetener has nearly dissolved (at this point you can transfer to a blender to mince onion pieces further if desired). Transfer to an air tight container and refrigerate 30 minutes. Remove from your refrigerator and stir ( if you would like dressing to have a thinner consistency you can mix in a little almond milk 1 teaspoon at a time to thin. Store dressing in refrigerator.

Keto Poppy Seed dressing

Ingredients

1 cup mayonnaise or homemade mayonnaise

⅓ cup apple cider vinegar

¼ cup erythritol

1 tablespoon chopped white or yellow onion

2 teaspoon Dijon mustard

½ teaspoon salt

⅓ cup avocado oil

1 tablespoon poppyseeds

Instructions

1 Add the mayonnaise, vinegar, sweetener , onion, mustard, and salt to a blender and process on high for 20 seconds. With the blender still on, slowly stream in the oil. Add the poppyseeds and pulse the dressing 3-4 times on low until all the ingredients are fully combined. Recipe makes about 2 cups of dressing or 12 servings.

  • 1 8 oz can Tomato Sauce
  • 2 T Onion Powder
  • 1/2 t Salt or to taste
  • 1 T Vinegar or to taste
  • 1 t Paprika
  • 1/4 t Cinnamon
  • 1/3 c Erythritol or sweetener of choice 


Instructions

  1. Thoroughly mix and put in a plastic ketchup squeeze bottle 
  2. Store in frigerator 
  3. Enjoy!

Keto Instant Pot BBQ Pork Ribs ( Low Carb Sugar Free)




How to Make Ribs in the Instant Pot – Low Carb


If you’ve ever wondered how to make ribs in the Instant Pot, then this post is for you! Easy and delicious low carb ribs in less than an hour total – it’s a dream come true!

Yield: 6 servings

INGREDIENTS

~ 5 pounds of pork ribs (country style) cut into sections

FOR THE DRY RUB:

1.5 Tbsp kosher salt

1 Tbsp erythritol or other sweetener

½ tsp ground black pepper

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

½ tsp allspice

½ tsp ground coriander

FOR THE SAUCE:

1/2 cup reduced sugar ketchup or Homemade Sugar Free Low Carb Ketchup

2 Tbsp erythritol or other sweetener

2 Tbsp red wine vinegar

1/2 cup water

1/4 tsp liquid smoke

1/2 Tbsp ground mustard

1/2 Tbsp ground allspice

1/2 tsp onion powder

1/4 tsp xanthan gum (optional)

INSTRUCTIONS

1 Season the ribs with the dry rub ingredients on all sides.

2 Stack the rib sections in the Instant Pot (or slow cooker.)

3 Combine the ketchup, sweetener, vinegar, water, liquid smoke, mustard, allspice, and onion powder in a small bowl and whisk to combine.

4 Pour the sauce mixture over the ribs.

5 Seal the Instant Pot and use the Manual setting to set the time to 35 minutes on high pressure.

6 After the cooking is done, release the pressure per manufacturer’s instructions and remove lid.

7 Remove the ribs to a platter and keep warm.

8 Whisk the xanthan gum into the sauce, then use the saute function to cook the remaining liquid in the pot for 10 minutes. Pour the sauce over the ribs and serve.

IF USING A SLOW COOKER, COOK ON LOW FOR 6-8 HOURS OR ON HIGH FOR 4 HOURS. THEN COOK THE LIQUID DOWN ON THE STOVETOP UNTIL THICKENED BEFORE POURING OVER THE RIBS.

Keto Instant Pot Boneless Pork Chops (Low Carb Sugar Free)


Best Instant Pot Boneless Pork Chops

Prep time:  10 mins

Cook time:  7 mins

Total time:  17 mins

Serves: 2

 Ingredients:

2 pork chops, boneless 1" thick

2 tablespoons sugar free brown sugar substitute.

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika

½ teaspoon onion powder

1 tbs butter

1 cup chicken broth

½ tablespoon Worcestershire sauce

1 teaspoon Liquid Smoke

Instructions

1 Mix spices and  brown sugar substitute , rub into both sides of pork chops.

        2         Set Instant Pot on saute (high) and add tablespoon butter. Once hot, add pork chops and brown on both sides for 1-2 minutes each. Remove pork chops and set aside. Press cancel.

3 Add 1 cup chicken broth and use a wooden spoon to deglaze the bits off the bottom of the pot. Add Worcestershire sauce and liquid smoke and add pork chops directly to the pot in the liquid.

4 Secure lid, make sure vent is set to "sealing" and pressure cook (manual) for 7 minutes. When done, allow pressure to naturally release for 12 minutes. After 12 minutes, quick release the rest, remove lid and pork chops.

5 Let pork chops rest for about 5 minutes before serving.
