Easy Zero Carb Noodles



Ingredients
  • 1/3 cup water
  • 3 Tablespoons powdered gelatin
  • 1 cup low moisture full fat Mozzarella cheese
Steps
  1. Add water and gelatin in small pot medium heat. Mix well let it start to boil.
  2. Add cheese constantly stirring until cheese is completely melted.
  3. Pour out on to parchment paper. Spread with non-stick spatula to thin layer.
  4. Refrigerate for 2 hours.
  5. Roll up cheese cut into desired size for noodles. (I like mine thin)
  6. Top with favorite sauce.
Notes
  • Careful not to have sauce to hot or noodles will melt. Eat immediately after sauce is applied over noodles. 
  • Enjoy! 
  • Per 1oz: Zero carbs, 7g protein, 7g fat 

Insta pot bone broth



Servings: 32
Ingredients
  • 2.5 pounds beef marrow bones usually “beef bones” at the store
  • 2.5 pound necks or feet I love beef and chicken feet
  • 1-2 tablespoons apple cider vinegar optional
  • 1 carrot sliced
  • 1 stalk celery sliced
  • 2-4 cloves garlic smashed
  • a few black peppercorns
  • lots of sea salt
  • filtered water
  • Equipment Needed:
  • Instant Pot
Steps
  1. Preheat oven to 350º F. Spread marrow bones out on a cooking sheet and roast 20 minutes. Carefully turn the bones over and roast for another 15 minutes. Remove from the oven and let cool slightly.
  2. Transfer roasted bones to the Instant Pot, then pour a little water on the cooking sheet. Use a spatula or whisk to loosen the browned bits left over from the bones, then pour the water, melted tallow (fat from bones), and browned bits into the Instant Pot.
  3. If using apple cider vinegar, add the other bones to pot and pour vinegar over. Let sit for 30 minutes then proceed with recipe.
  4. Place the other bones (necks, feet, or backs), carrot, celery, a few peppercorns, fresh herbs, and plenty of sea salt in the bowl of the Instant Pot. Pour filtered water up 2/3 full, then secure lid with the valve in Sealing position.
  5. Cook on Manual Low Pressure or 180 minutes, then natural release. Let cool to touch.
  6. Place a mesh strainer over a large bowl and gently pour broth over strainer. When all the broth is strained, discard the bones and veggies, and pour the broth into glass jars with tight-fitting lids, or into plastic freezer bags.
  7. Keeps in the fridge for about a week. Alternately, freeze, lying flat. Keeps in freezer for several months. I usually refrigerate what I’ll drink or use that week and freeze the rest.
Notes
  • Letting the bones soak with apple cider vinegar helps extract all the nutrients from the bones. I prefer the taste without, however, and since I drink it 

Keto everything bagel cheese crackers



Servings: 42 CRACKERS
Ingredients
  • 1 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 cup grated Parmesan cheese
  • 1 large egg
  • 2 teaspoons Everything bagel seasoning
Steps
  1. Preheat the oven to 350°F.
  2. Mix together the almond flour, garlic powder, salt and Parmesan cheese. Add the egg and mix until all ingredients are fully combined, I do this with my hands Create a ball with the dough.
  3. Place the dough on a large sheet of parchment paper. The parchment paper should be the size of a large cookie sheet. Place another sheet of parchment paper of equal size on top of the ball of dough.
  4. Use a rolling pin, roll the dough into a thin layer approximately 1⁄4-inch in thickness.
  5. Remove the top layer of parchment paper. Sprinkle with everything bagel seasoning and press it into the top crackers using your hands.
  6. Use a pizza cutter to cut/score the dough into small cracker sized squares. (You can use a knife to do this, but a pizza cutter makes it much easier.
  7. Place the dough and bottom layer of parchment paper on a large cookie sheet.Bake for 12 – 15 minutes or until golden brown.
  8. Break apart into crackers along the scored lines once crackers have cooled. Store in an airtight container for up to 7 days.

Creamy Taco Soup with Ground Beef Low Carb



Ingredients
  • 1 pound ground beef
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder
  • 1 (8 ounce) package cream cheese, softened
  • 2 (14.5 ounce) cans beef broth
  • 2 (10 ounce) cans diced tomatoes and green chiles (such as RO*TEL®)
  • ½ cup heavy cream
  • 2 teaspoons salt, or to taste
Steps
  1. Combine ground beef with onion and garlic in a large soup pot over medium-high heat. Cook and stir until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add cumin and chili powder; cook 2 minutes more.
  2. Drop cream cheese into the pot by bits and mash it into the beef with a big spoon until no white spots remain, 3 to 5 minutes. Stir in broth, diced tomatoes, heavy cream, and salt. Cook until heated through, about 10 minutes more.

Keto Gingerbread Ice Cream



Ingredients
  • 1½ cups heavy cream
  • 1 cup unsweetened almond milk
  • 6 large egg yolks
  • 1/2 cup Allulose sweetener
  • 1 teaspoon vanilla extract
  • ½ teaspoon maple extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ginger powder
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
Steps
  1. In a heavy saucepan over low heat, heat the heavy cream and almond milk, stirring with a whisk. Add the egg yolks and continue whisking until just warmed.
  2. Add the sweetener and whisk until completely dissolved.
  3. Continue heating, whisking constantly, until the custard thickens, about 10 minutes. When the custard coats the back of a wooden spoon or reaches 140°F on a candy thermometer, remove the pan from the heat. Do not allow the mixture to warm to over 140°F or the eggs will begin to cook.
  4. Stir the extracts, spices, and salt into the ice cream mixture. Place in the refrigerator to cool.
  5. When cool, churn the ice cream mixture in an ice cream maker following the manufacturer’s directions. Continue churning until it reaches your desired consistency.
  6. Store leftovers in the freezer. When frozen, this ice cream will harden to a solid state. Allow to thaw at room temperature for about 10 minutes before enjoying.

Keto Ginger Snap Cookie’s



Ingredients
  • 2 ounces (¼ cup) of Unsalted Butter, melted
  • 2 ounces (¼ cup) of Sukrin Gold
  • 1 large Egg
  • 3.5 ounces (1 cup) of Almond Flour
  • 2 teaspoons of Ginger, ground
  • ½ teaspoon of Cinnamon, ground
  • ½ teaspoon of Baking Powder
  • Pinch of Cloves, ground
  • 2 ounces (¼ cup) Sukrin Gold, extra
Steps
  1. Preheat your oven to 180C/355F. Prepare a cookie sheet and line with parchment paper.
  2. In a mixing bowl, add the melted butter, Sukrin gold, and egg. Mix well.
  3. Add the remaining ingredients, except the extra sweetener, mix into a soft dough.
  4. Put the extra Sukrin gold onto a plate or into a flat bottomed container.
  5. Scoop tablespoon-sized balls of cookie dough and coat in the Sukrin gold. (As the dough is quite soft, we recommend using food-safe gloves to handle it.)
  6. Roll and press into discs, place onto the cookie sheet. Ensure to leave room around the cookies as they will spread.
  7. Sprinkle the cookies with any leftover sweetener.
  8. Bake for 18-25 minutes, the cookies will be quite brown around the edges but still feel quite soft to the touch.
  9. Leave to cool and crisp up before enjoying.

Keto carrot cake



Ingredients
  • Cake Ingredients
  • 1 ½ cup almond flour
  • ½ cup granulated Swerve or sweetener of choice
  • ¼ cup of golden Lakanto monkfruit or golden Swerve
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ⅛ teaspoon ground cloves
  • 1 cup loosely packed grated carrots (from one medium sized carrot)
  • 4 egg
  • 4 tablespoons butter, melted
  • ½ teaspoon vanilla
  • ½ cup chopped pecans
  •  
  • Frosting Ingredients
  • 8 oz cream cheese, softened
  • 5 tablespoons butter, softened
  • 1 tablespoon sour cream or plain yogurt
  • ½ teaspoon vanilla
  • ½ cup confectioner’s Swerve
Steps
  1. Preheat oven to 350 degrees.
  2. Grease the bottom and sides of one large circle cake pan or two 6 inch pans. Line the bottom with a circle of parchment paper.
  3. Whisk together all the dry ingredients.
  4. Add the carrot, eggs, butter, vanilla to the dry ingredients and mix until combined.
  5. Stir in the pecans.
  6. Scoop batter into prepared pans (fill halfway). Bake at 350 for 22-30 minutes. 22-25 minutes for 6 inch pans and 25-30 minutes for 8 inch. Bake until set in the middle.
  7. Let cool completely before frosting.
  8. For the frosting, whip together cream cheese, butter, vanilla, and sour cream. Slowly add in the confectioner’s Swerve and continue to whip for another 2-3 minutes or until fluffy.
